Winemaking

Dennis views the craft of winemaking as a collaborative team project of which he is the director. Fife wines are about Dennis’s vision. He selects the vineyards and blends and together with his long time friend Phil Baxter, consulting winemaker, supervises the winemaking process.

The winemaking philosophy is simple: seek out grapes with personality and breed, handle them minimally, and then focus on blending to bring out nuance and character in the wine.
